Perrys Curry Chicken Salad

This recipe was given to me by Keith Perry.  It is my favorite thing that he serves at his restaurant in Ketchum, Idaho.  Very generous of him.
5 lbs chicken marinate in teriyaki
1/2 can water chestnuts
2 cups raisins
5 cups grapes, red
2 bunches green onions, cut diagonally
2 bunches celery, cut diagonally
  Marinate chicken, 2-4 hours.  Then, combine all ingredients in a bowl. Pour sauce over and stir.  Chill and serve

Sauce Curried Chicken
2 cups Mayo
4 cups curry sauce (dressing)
1 Tbl Curry Powder

Dressing Curry
3/4 Cups white onion
2 1/2 cups brown sugar
1/4 cup white wine
3 Tbl Soy Sauce
7 Tbl Curry Powder
1 1/2 Tbl lemon juice
10 cups mayo
Purée onion then add brown sugar,white wine, curry powder, soy sauce and lemon juice, Measure Mayo into bucket then add curry mixture and blend well.

Beef Stroganoff for Instant Pot

Can be used with Beef or Chicken

2Tablespoons olive oil
1/2 onion, diced
2 teaspoons salt, divided
2 lbs (or less) beef or chicken cut into 1 inch cubes
1 teaspoon black pepper, freshly ground
3 cloves garlic, minced
1/2 teaspoon pepper
2 Tablespoons soy sauce
3 cups sliced or chopped mushrooms
2 Tablespoons all purpose flour
3 cups chicken broth
1 16 ounce pkg wide egg noodles
3/4 cup sour cream, or to taste

Turn on instant pot to sauté and add oil.  Heat to sizzling.  Add onion and 1/2 teaspoon salt; cook and stir until onion begins to soften (3-4 minutes)
Season beef or chicken with 1 teaspoon salt .  Add to the pot.  Cook and stir until browned evenly on all sides (abt. 2 minutes) Add garlic and pepper, cook until fragrant, about 30 seconds.  Add soy sauce.
Stir in mushrooms.  Stir in flour until evenly distributed.  Pour in chicken broth and remaining 1/2 tsp salt.  Close and lock the lid.  Set timer for 10 minutes.
Release pressure using the quick-release method.  Open cooker and add egg noodles.  Seal and bring to pressure again, cook for 5 minutes.  Release pressure naturally for 5 minutes then release remaining pressure using quick release method.  Open pressure cooker and stir in sour cream.

Lemon Water

Use to prevent kidney stones

6 c water
1 c sugar
1 tsp citric acid
1 tsp lemon extract
Ice
Mix and drink

Rhubarb Pie

3 cups cut rhubarb (1 inch pieces)
1 cup sugar
3 tablespoons flour
Dash salt
1 recipe pastry
2 Tbl butter or Margarine
note: if adding strawberries to this pie increase the flour by 2 tablespoons

Combine ingredients and fill a 9 inch pastry lined pan.  Dot with butter and add top crust
Bake at 400 degrees 40 to 50 minutes.  Check crust after 30 minutes.  If suffiently brown cover with foil for remaining time
